Charity and I discovered a new favorite recently. We had avocado toast for an early lunch at a restaurant a few weeks ago and absolutely loved it. I had to learn what this awesome meal was and how to make it. Avocado toast is not anything fancy. The version of avocado toast the restaurant offered had sliced avocado (obviously), Canadian bacon, a fried egg, and burrata cheese. All of this goodness was on a slice of toasted ciabatta bread. I literally liked the plate clean.
Making avocado toast is really easy and is quite versatile. It is really just toasted bread with a mashed up avocado and other ingredients layered on top. The ease of assembling the meal and variety of healthy toppings is the best part of this meal. You are not even limited to eating avocado toast for breakfast either. Try avocado toast with tomato sauce and a slice of fresh mozzarella cheese.
The avocado toast that I photographed is Charity and my new favorite Sunday morning breakfast. We toast a slice of Dave's Rock and Roll Bread then mash an avocado on top of the bread. I then place a slice of fresh tomato and a fried egg cooked sunny side up on the stack. Most of the time I will add a thin slice of cheddar cheese on top of the egg before pulling off the frying pan. On days we really want some indulgence, I will cook some bacon and add that to the pile.
